With this warmer weather creeping into fall, many are just now have their late summer/ early fall garden harvests. Not sure what to do with all of the tomatoes and squash you are getting daily? We can help out with some fall harvest ideas.
Can/ Jar- There are canning recipes everywhere online, so it won’t take too much digging to find a way to reserve everything you have harvested recently. Pinterest is a great place for resources, for everything canning, preserving, baking and cooking related.
Freeze Batches- You can make big batches of spaghetti sauce, tomato puree, cubed squash, or squash soups, bag and freeze for this winter. They are super convenient for nights you don’t have time to cook, or don’t have that can of diced tomatoes you need for a hot bean soup, just pull out of freezer, re-heat, and enjoy!
Decorate- For squash and pumpkins, you can use as fun fall decor around the house and front porch.
Dry/ Save Seeds- For veggies like green beans and tomatoes, you can dry out and save the seeds for next year.
Dinner Party- With all of your harvested veggies, lettuces, squash, and more, you can host a small dinner party for friends or neighbors. You can set up a large table or area outside, and stay socially distanced from each other, while enjoying a nice fall meal together.
Give Away- If you are still swimming in veggies and squash, think about making a little basket for friends and neighbors, and leave on their porch for a nice surprise. Another option is you can possibly donate to local food banks. You will have to call around to make sure this is okay with COVID guidelines, and with all of the families that have been affected by the recent wildfires, they could use some extra food, so call your local Salvation Army to see how you can help, or donate to them for their food banks here in Oregon.
